Hey everyone! Happy Saturday! Today I am sharing another recipe. Today’s recipe is these delicious blueberry muffins!! They are so good! And yes, if you’ve seen my other recipes you know this one is a no sugar recipe.
So here’s what you need:
2 cups almond flour
1 tsp baking soda
2 Tbsp butter, softened
2 egg whites
2 eggs
1 tsp vanilla extract
1/4 cup pure maple syrup plus maybe a splash more
1Tblsp apple cider vinegar
1 cup of fresh or frozen blueberries
Directions:
1. Preheat oven to 350 degrees and line a cupcake pan or grease
2. in a small bowl add almond flour and baking soda
3. In a mixer add softened butter, eggs, egg whites, vanilla extract, maple syrup, and apple cider vinegar
4. Add dry ingredients to the wet ingredients
5. pour batter into cupcake pan and cook for 25 mins until a toothpick comes out clean
6. Let cool and enjoy
